Norberto Piattoni Focuses on Fire-Based Cooking at Metta

Metta, headed by chef Norberto Piattoni, opens in Fort Greene with a focus on sustainably sourced, vegetable-forward dishes cooked in a custom, open fire kitchen. The Argentina-born Piattoni uses flame, embers, and smoke, as well as traditional preservation techniques, to prepare dishes including charred beets with crème fraîche and rye berries; smashed potatoes with roe and scallion; and freekeh and mushroom risotto.
