A topping of crunchy, roasted coconut shavings and sesame seeds hug soft potatoes covered in lime juice, Southeast Asian style.

Ingredients

3 tbsp Coconut flakes
1 whole Lime
2 whole Potatoes
2 pinch Salt
3 tbsp Sesame seeds

Preparation of This Healthy Recipe

Start the potatoes boiling. Meanwhile roast the coconut shavings and sesame seeds until just browned. When the potatoes are soft, strain. Drizzle lime juice over the potatoes and gently mix in coconut and sesame seeds. Delicious!
