Recipe: Light Zesty Grilled Shrimp

Nothing beats seafood in the summer! This light and simple shrimp marinade goes beautifully with a seasonal salad to make a feel-good meal. 

Shrimp is a great source of protein, it evokes a sense of leanness. But with anything, if you overdo it, the positive effects will diminish a bit.

This recipe is great for entertaining or even if you just want to make a tasty meal at home. It only requires a few ingredients and is simple to make. You can use a grill pan to cook the shrimp, but a grill will also work really well.

Hopefully after making this light meal you'll feel peaceful and satisfied!

Ingredients:

  • 1 lemon, zest and juice
  • ⅛ cup white wine
  • 2 cloves garlic, minced
  • 1/3 cup fresh parsley, chopped
  • ½ cup extra light olive oil
  • ½ tsp salt
  • 1 lb. raw shrimp, peeled

Instructions:

In a medium bowl, combine the marinade ingredients.

Pour the mixture over the shrimp, and let it marinate for about 10 minutes before grilling.

Cooking time depends on heat level, so watch the coloring to know when it’s fully cooked!

You can garnish with a little bit of lemon and as much parsley as you'd like. Parsley is a rockstar ingredient, it helps promotes easy, smooth digestion.
