Tomorrow is the official start of winter. Today, though, is National Sangria Day, so whip up a pitcher of sangria and ward off thoughts of ice and cold for the time being.

Lindsay Matteson of Amor y Amargo in Manhattan’s bustling East Village makes a You Must Remember This Sangria with Pavan, orange bitters, lime, tangerine juice, Cava, and Vinho Verde. Pavan is a French liqueur made from Muscat grapes and infused with orange blossom, making it an ideal base to take a simple sangria to the next level, adding complexity and balance to this signature favorite.

1.5 oz Pavan Liqueur
4 dashes Scrappy’s Orange Bitters
.25 oz lime juice
.75 oz tangerine juice
1 oz Vinho Verde
3 oz Cava
1 wedge tangerine

Briefly stir all ingredients except wine and Cava in a mixing glass with ice. Pour into a wine glass; Vinho Verde, ice, and stir. Top with Cava. Garnish with a cinnamon stick and a long tangerine peel. Enjoy!
