When cooking bear in mind, that canola oil has a much higher smoke point, which makes it better suited to stove top dishes. It is also lower in saturated fats. If the fact that canola oil is genetically engineered bothers you, than just go for the organic option. 

On the other hand, coconut oil is high in saturated fats, although it may not be the harmful saturated fat that we all tend to fear. The organic virgin coconut oil that you find in health food stores is a healthier option. Coconut oil has its place in cooking too. It can add a lovely, creamy, and slightly nutty flavor which works well in bakes goods. It is also helpful for people who don’t want to use butter, as it can help make the pie crust flaky, and the icing fluffy.
