Previously, we showed you how to make your own almond milk. This episode will show you how to turn the leftover pulp into cookies.
CHOCOLATE ALMOND COOKIES
Ingredients:
2 cups almond pulp
2 dates, chopped and made into a paste
1/2 cup cocoa powder
2 tablespoons coconut oil, melted
2 tablespoons coconut flakes
1/4 cup almond milk
1 tablespoon flax
2 tablespoons vanilla sugar
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
powdered sugar, for dusting
1. Preheat oven to 350°F.
2. Combine all ingredients in a bowl and mix thoroughly.
3.Roll mixture into balls and then flatten in a criss-cross pattern with a fork.
4. Bake for 30-35 minutes.
5.Sprinkle with powdered sugar.
