Shrimp and Spinach Salad With Warm Citrus Dressing (Recipe + Video)

Ready in just about 20 minutes, this is a hearty and filling salad that can be served as a complete meal for lunch or dinner. Spinach is one of the most nutrient-rich plants; it contains high amounts of magnesium which increases the serotonin level in the body and help reduce the risk of depression and anxiety. Grape tomatoes are perfect for this salad because they’re small, flavorful, and more fleshy than watery.

Ingredients

For the dressing 2 tbsp. Olive oil 2/3 cup Onion 1/2 tsp. Ginger 1/4 tsp. Cumin seeds 1/8 tsp. Turmeric powder 1/2 cup Grape tomatoes 1/8 tsp. Ground salt 1/8 tsp. Salt 1/8 tsp. Ground black pepper 2 tbsp. Lemon juice
For the salad 4 oz. Baby spinach 1/2 lb. Cooked shrimp 1/2 cup Cooked Green Peas 1/8 tsp. Salt 1/8 tsp. Pepper

Directions

  1. Mince the onion and cut your tomatoes in half. Set aside.
  2. In a medium skillet over medium-high heat, add olive oil, onion, ginger, cumin seeds, turmeric powder, grape tomatoes, and salt. Stir to cook for 3-5 minutes, or until will become soft and transparent.
  3. In a large bowl, add the spinach, shrimp, and green pea. Season with salt and pepper. Pour the warm citrus dressing over the salad. Toss well and serve. Enjoy!
