CHOCtastic Raw Chocolate Recipe

We love peanut butter cups, but don’t love the unhealthy ingredients used. So why buy them when you can make much healthier versions yourself in only 30 minutes!

Here is CHOC Chick’s step-by-step raw chocolate peanut butter cups recipe (you can also watch our recipe video here)

Ingredients:
• 100g/3.5oz CHOC Chick organic raw cacao butter
• 6 tbsp CHOC Chick organic raw cacao powder
• 3-5 tbsp Sweet Freedom (natural low GI sweetener) or agave nectar
• 3-5 drops vanilla bean extract
• Organic and sustainably sourced peanut butter or cashew nut butter
• Mini baking cups or little muffin cases
Makes 20 nut butter cups

Step 1

Follow CHOC Chick’s “Simple Raw CHOC recipe“ but as you will need to make two batches, use half the ingredients each time.

Melt 50g raw cacao butter on a low heat over a pan of boiling water. Once the cacao butter has melted, add 2.5 tbsp raw cacao powder mixing well with a metal balloon whisk. Whisk in the Sweet Freedom/agave syrup (start with 2 tbsp and add a bit more if you prefer a sweeter taste), add the vanilla and mix well. The consistency should be smooth and quite runny.

Step 2

Spoon 1 tsp of the mix into mini baking cups and place in the freezer to set for 10 minutes.

Step 3

While the first layer is setting in the freezer, repeat Step 1 to make the top layer of raw chocolate.

Step 4

Once the chocolates have set, spoon in half a teaspoon of peanut butter into each baking cup, then top up with the second layer of the melted raw chocolate mixture.

Step 5

Place in freezer for another 10-15 minutes.

Take out when chocolate has set, peel off the baking cups and your CHOCtastic peanut butter/cashew nut butter cups are ready to enjoy.

Keep refrigerated or in the freezer to store, unless you end up eating them all at once (very easily done, ours lasted around 30 seconds!).
