Recipe: Warm Apple Cake, Spiced Apple Syrup, Cinnamon Gelato Recipe

Serves 8–10 people

20 Granny Smith apples (peeled, cored and cut into 1/8th)
8 oz butter
9 oz brown sugar
1 vanilla bean
1/2 teaspoon ground clove
1 teaspoon ground cinnamon 
1/4 teaspoon ground ginger
2 tablespoon flour
1/2 cup apple cider
1/2 cup water
1 cup sugar
1 cinnamon stick
1 star anise
1 clove 
5 pink peppercorns

In a large sauté pan add butter, sugar, vanilla bean (split and scraped), clove, cinnamon, ginger, and cook until apples are half way tender over medium heat.
Add flour, fully mix. 
In a 4-inch round baking dish tightly stack apples, and pour sauce over.
Bake at 350 degrees for 20 minutes.
Remove and cool.
In a small sauce pot add cider, water, sugar, cinnamon stick, peppercorns, and simmer for 15 minutes.
Once cake is cooled place dough shell on the bottom of the cake and flip cake out of mold.
To plate serve one slice with warm with warm syrup and a scoop of gelato or ice cream.

Dough
1 egg yolk
2 tablespoons very cold water
1 teaspoon vanilla extract 
1 1/4 cups unbleached all-purpose flour
1/3 cup sugar
1/4 teaspoon salt
8 tablespoons (1 stick) cold unsalted butter, cut into 1/4-inch cubes

In a small bowl, stir together the egg yolk, water and vanilla; set aside. 
To make the dough by hand, in a large bowl, stir together the flour, sugar and salt. Using a pastry cutter or 2 knives, cut the butter into the flour mixture until the texture resembles coarse cornmeal, with butter pieces no larger than small peas. Add the egg mixture and mix with a fork just until the dough pulls together. 
Transfer the dough to a work surface, pat into a ball and flatten into a disk. Use the dough immediately, or wrap in plastic wrap and refrigerate until well chilled, about 30 minutes. Roll dough to size of the baking pan ¼ thick and bake at 350 degrees for 10 minutes.
