Like any art, gastronomy needs to be nourished by guidance and appreciation. Professional and amateurs have produced a variety of gastronomical guides. Most of them were born in France, the cradle of classical kitchen. The most well-known are Michelin, Gaultmillau, S. Pellegrino, and Les Grandes Tables du Monde, which emphasizes quality and tradition.
Shalom Maharovsky, an expert in restaurants who has studied wines and gourmet cooking, established Mul-Yam in 1995. At that time, lobsters, oysters, langoustine, and scallops were not very prevalent in Israel.
Walking in the old Tel Aviv seaport, Maharovsky pointed to a spot between the sand and the hangars and decided that was the perfect place to open the first gourmet restaurant in Israel specializing in seafood.
