  • 1/4 cup extra-virgin olive oil
  • 1 teaspoon honey
  • 1/4 teaspoon salt
  • 1/8 teaspoon freshly ground black pepper
  • 4 cups 1-inch watermelon cubes, cold
  • 2 cups (gently packed) arugula
  • 3/4 cup crumbled feta cheese
  • 1 scallion, light and dark green parts, thinly sliced
  • 2 tablespoons chopped fresh mint leaves
