Sheet-Pan Shrimp Fajitas

Made in just one pan, these quick and easy fajitas taste delicious served with warm tortillas, cilantro, avocado, and sour cream.

Serves 6
  • 1 (1-ounce) package fajita seasoning
  • 3 tablespoons olive oil
  • 2 teaspoons minced garlic
  • 1 1/2 pounds medium uncooked shrimp, peeled and deveined
  • 1 red bell pepper, sliced into strips
  • 1 green bell pepper, sliced into strips
  • 1 yellow bell pepper, sliced into strips
  • 1/2 yellow onion, sliced into strips
  • 12 (8-inch) tortillas
  • Diced jalapeño, for topping
  • Cilantro, for topping
  • Lime juice, for topping
  • Sliced avocado, for topping
  • Sour cream, for topping
Preheat the oven to 450 degrees F.

Mix fajita seasoning, olive oil, and garlic together in a large bowl. Add shrimp, peppers, and onion to the bowl and toss to coat.

Evenly spread shrimp, peppers, and onions in a single layer on a half-sheet baking pan.

Bake until the shrimp is cooked through, about 6 to 8 minutes. Remove the shrimp from the pan and set aside.

Place tortillas on a microwave-safe plate or on a damp paper towel in the bottom of a microwave-safe tortilla warmer. Cover with a damp cloth or paper towel. Microwave for 30 seconds.

Set the oven to broil, return the pan to the oven, and cook peppers and onions until they begin to char, about 2 to 3 minutes. Remove from the oven and serve immediately with the shrimp, spooning the mixture into warm tortillas and adding preferred toppings.
