When you caramelize food, the browning effect can enhance umami by as much as seven or eight times! Here, mushrooms get extra sweet and sticky in the pan, and then they’re tossed in some smoked paprika and soy for an extra umami boost. Black-eyed peas and garlicky sautéed greens make this a super-charged, protein- and nutrient-packed plant-based powerhouse. It’s extra awesome served with polenta with smoked cheddar and kale or cornbread.

- 6 tablespoons extra-virgin olive oil
- 2 medium portobello mushrooms, stemmed, and caps sliced into 1/4-inch cubes
- 1/4 teaspoon kosher salt
- 2 tablespoons soy sauce
- 1/2 teaspoon smoked paprika
- 5 garlic cloves, peeled and minced
