This soup recipe is a comfort-food two-fer. It’s packed with satisfying chicken meatballs floating in a nourishing chicken broth. The recipe is inspired by an Italian Wedding Soup, a classic Italian American vegetable and meatball soup that often includes pasta. (Note that the term “wedding” refers to the marriage of its ingredients, not the celebration of a romantic union.)

This recipe relies on a cheesy boost of flavor with a generous amount of grated Parmigiano-Reggiano cheese folded into the meatballs and a hunk of the cheese rind added to the broth for more umami depth. If you prefer a gluten-free (and Passover-friendly) meatball, matzo meal can be substituted for the breadcrumbs.
