How about a virgin piña colada for a healthy breakfast or mid-afternoon snack? Pineapple contains bromelain, a potent enzyme that helps to reduce inflammation. How delicious is that?! 

  • 1 cup fresh pineapple chunks
  • 3/4 cup coconut water-juice blend
  • 1/4 cup plain lowfat kefir
  • 1 cup of ice


Directions


Place all ingredients in a blender and blend until smooth.

I like to use Lakewood organic fresh blend of coconut and grape juice, but you can use any bottled blend of coconut with any juice you like as long as there is no added sugar.
