‘Water Only’ Cocktail Bar Opening in London

A cocktail bar is set to open in a London department store that only serves water. The bar’s menu will be created based on consultation from several “water sommeliers.”

A cocktail bar is set to open in a London department store that only serves water. 

The bar’s menu will be created based on consultation from several “water sommeliers.” 

The bar, to be opened in Selfridges on Oxford St., follows a trend started in the United States, where water bars started showing up a few years ago. In 2013, Ray’s and Stark Bar in Los Angeles came up with a 20-item water menu that took up 45 pages. 

“Water has a taste. Why not create a water menu?” German water sommelier Martin Riese told the Sunday Times. “Just buy different brands of water with different [mineral] levels and taste them side by side. You will suddenly see how different they actually are.”

“Like wine, one can actually taste the region and depth from which the water comes,” Riese said.
