Serves 4 to 6 as a starter

  • 1 cucumber, halved lengthwise and seeded
  • 2 to 3 sprigs fresh dill, finely chopped
  • 2 to 3 sprigs fresh mint, finely chopped (optional)
  • 1 cup plain full-fat Greek yogurt
  • 2 cloves garlic, minced
  • Juice of 1/2 lemon
  • Pinch of salt

Grate the cucumber on the large holes of a box grater and squeeze out the excess liquid with your hands. 

Mix all the ingredients in a bowl. Taste for seasoning, and add more salt if needed. Refrigerate until you are ready to set the table.
