Recipe: Thai Iced Tea

This recipe is compliments of Sripraphai Thai Restaurant. Thai iced tea is made by putting together strong tea (using tea powder from Thailand), sweet condensed milk, and Coffee-mate.

We normally make 10 gallons at a time using big pot. However, for readers who may interested in making this tea at home, we have reduced the portion accordingly.

Ingredients:

About 3 ounces of Thai tea powder
About 2 cups of water
1 cup of Coffee-mate
1 and one-half cups of sweet condensed milk

Method:

Bring the water to a boil in a large saucepan. Add the tea and remove the pan from heat. Stir to submerge all the tea leaves in the water. Steep for about 5 minutes. Pour the brew through a coffee filter or a fine-mesh strainer into a large pitcher. Add condensed milk and Coffee-mate. Stir together well and serve in a tall glass full of ice. This could serve about 4 to 6 glasses.

The sweetness can be adjusted to each person’s preference by either adding or reducing condensed milk.
