Recipe: Karmic Kale Salad

Serves 6-8

4 bunches kale stalks removed and discarded, leaves thinly chopped
2 1/2 medium lemons, juiced
1/2 cup extra-virgin olive oil
2 teaspoon agave
1/4 cup pumpkin seeds
1/4 cup shredded carrot
1/2 cup tahini
1/4 cup dried cranberries
salt to taste

In a large bowl, add the kale, half of lemon juice, half of olive oil, and a little salt. Massage briskly until the kale is fully coated, about 1-2 minutes. Set aside.

In a small bowl, whisk remaining lemon juice with the tahini and oil. Add a pinch of salt, then whisk together. 

Gently combine the kale, pumpkin seeds, shredded carrot, and cranberries. Pour the tahini dressing over the kale. Toss and serve.
