Housed in an old tool and die warehouse, Dinosaur Bar-B-Que opened on 604 Union Street, where it borders both Park Slope and Gowanus. 

It was founded by John Stage, who is also the pitmaster. 

Dinosaur’s menu celebrates southern barbecue, smoked low and slow over hickory. 

In addition to Dino favorites like Jumbo BBQ Chicken Wings, St. Louis Style Ribs, Barbecue Pork Shoulder and Beef Brisket, the new restaurant also offers menu items that are unique to Brooklyn—such the Breakfast All Day, which consists of a smoked brisket and poblano hash served with a sunny side egg; the Ode to Domolise, a specialty sandwich with brisket, beef gravy, Swiss cheese, lettuce, tomato, pickled onion, jalapeño relish, and BBQ mayo; and The F.G.T.V. with fried green tomatoes, pimento cheese, shredded cabbage, and chow-chow. 

The bar offers 20 local, regional, and seasonal craft beers on tap, with three Brooklyn varieties, including pours from Brooklyn Brewery, KelSo, and Sixpoint. There are also four wines on tap, in addition to by the bottle or glass, as well as a number of signature cocktails.
