Cranberry-Almond No-Bake Energy Bites

You can add 1 tablespoon of chia seeds or ground flaxseed to oat mixture in step 1, if desired. Energy bites can be refrigerated in an airtight container for up to three days.
Makes 12 bites
Total Time: 15 minutes, plus 30 minutes chilling time
Gather Equipment:
  • Dry measuring cups
  • Measuring spoons
  • Large bowl
  • Rubber spatula
  • Plate
  • Plastic wrap
Prepare Ingredients:
  • 3/4 cup (2 1/4 ounces) old-fashioned rolled oats 
  • 1/3 cup peanut, almond, or sunflower butter 
  • 1/3 cup sliced almonds 
  • 1/3 cup dried cranberries 
  • 2 tablespoons honey
  • 1/8 teaspoon salt
Mix: Stir all ingredients in bowl with rubber spatula until well combined.
Shape: Use your wet hands to roll mixture into 12 balls (about 1 tablespoon each). Place balls on plate and cover with plastic wrap. 
Chill: Refrigerate balls until firm, at least 30 minutes.
