Cheese Scones

This is what you need

225g/8 oz of SR flour – or plain flour and 2 tablespoons of baking powder

Pinch of salt

55g/2 oz of chilled butter cut into cubes

120g of finely grated mature cheddar OR 60g of grated hard Italian cheese – you will need to keep a

bit back to sprinkle on top.

100ml of milk plus a few spoons of milk for glazing

This is what you do

1) Preheat your oven to 200C or 180C Fan 390F or 350F fan.

2) Line a baking tray with baking paper or a silicone baking mat or grease a baking tray.

3) Sift the flour salt and baking powder into a bowl

4) Add the butter and rub in to form fine breadcrumbs

5) Add the cheese BUT keep a little to sprinkle on top

6) Use a knife to mix in a little milk at a time, don’t use your hands as it will make the scones

tough.

7) Form only at the ends with your hands into a dough

8) Roll out on a floured board to 2 cm thick or an inch thick

9) Cut out with a cutter, I made six.

10) Brush with milk and sprinkle with a little cheese

11) Bake for 14 minutes in a fan oven or until golden.

12) Serve warm with butter.
