If you missed American National Bacon Day on Saturday, Aug. 31, don’t fret as you can still have a belated celebration with a favorite sandwichthe BLT (bacon, lettuce and tomato).

In my family, my mother liked the traditional BLT on toasted bread with mayo. My dad liked his with one side of the toast buttered and the other slathered with peanut butter. Us kids preferred dad’s style of BLT. And yes, it is good.

Here are three BLT recipes with a twist. Even with the California BLT, I still add peanut butter.

No-Meat BLT

Per serving

2-3 slices smoky bacon-flavoured tempeh fried per instructions
2 whole grain or non-gluten bread slices, toasted
Peanut butter or butter
Tomato slice
Lettuce leaf

Spread peanut butter or butter on the slices of toast and layer the other ingredients in between.

California BLT

Per serving

2-3 slices bacon, cooked crispy and patted dry of grease
2 Asiago sun-dried tomato bread slices
Arugula lettuce leaves
Tomato slice
Avocado, thinly sliced
Bean sprouts
Mayonnaise, deli mustard, peanut butter, butter

Spread equal amounts of mayonnaise and deli mustard, or peanut butter on one bread slice, and butter on the other. Layer the other ingredients between the bread slices.

White Bread BLT

Per serving

4 slices bacon, cooked crispy and patted dry of grease
3 slices of white bread, toasted
2 tomato slices
Lettuce leaf
Bean sprouts
Peanut butter, mayonnaise, butter

Spread peanut butter on one toast slice and butter or mayo on the other two slices. Layer the other ingredients between the slices.
