Now that you have successfully devoured that Thanksgiving turkey, what should you do now? Make turkey soup!

This is a recipe for very basic turkey soup.

Ingredients:

Turkey carcass, bones
Several stalks of celery and chopped tops
One bay leaf
A tablespoon of salt
A medium sliced onion
A teaspoon of chicken or vegetable bouillon
Carrots
Peas
Leeks
Parsnip

Place the turkey carcass and bones into about 10–12 cups of water and bring to a boil in a soup kettle. After that, reduce the heat, simmer, and add bay leaf, salt, and the onion for about two hours. Take out the turkey carcass and any bones after the two hours.

Add the bouillon and some vegetables. Carrots, corn, peas, leeks, parsnips, or cabbage work well.

Cover and keep it simmering for about 30 minutes.

The soup can be easily refrigerated or frozen for days to come.
