Suviche, anyone? We were spending the weekend at the Fairmont Scottsdale Princess and having a sunset dinner overlooking the 18th hole at Toro, the resort’s newest expansive restaurant in the Clubhouse of TPC Scottsdale. Toro is a collaboration with celebrity chef Richard Sandoval, with a “suviche” bar—sushi and ceviche, wok dishes, small plates for sharing, and a beverage program that features a large selection of Japanese whiskies, all with spectacular views overlooking the McDowell Mountains. The lobster fried rice was also a standout.

There’s nothing wrong with a little pampering, I thought, as earlier I enjoyed all of the features at the Fairmont Scottsdale Princess Well & Being Spa with 44,000 feet, the largest in Scottsdale. There are the typical steam and sauna but also a waterfall hot tub, showers with eucalyptus aromatherapy, cold plunge, rooftop pool, and a Sisley-Paris Spa, a spa within the spa for ultra luxe experiences, only one of 27 around the world.
