Dishes to add to your cooking repertoire: Polenta Sage Cashew Cheese Wedges with Maple Roasted Kabocha and Caramelized Shallot Chestnut Ragout; Rosemary Hempseed-Crusted Seitan with Horseradish Mashed Potatoes, Lemon-Garlic Swiss Chard, Smoked Mushroom Gravy, and Matchstick Fried Parsnips; and, for dessert, and Lavender Vanilla Bean Creme Brûlée.
