Ginger Lime Smoothie Recipe

Spring is in the air! After a super chilly and snowy winter, this is very exciting. I do love my smoothies all year round, but I tend to have them much more frequently when it starts to warm up outside. This smoothie includes the warming properties of ginger, the energizing and fat burning properties of medium chain triglyceride (MCT) oil, and refreshing properties of lime and mango.

Ingredients:

  • 1/2 banana
  • 1 1/2 cups kale, de-stemmed
  • 2 inch piece of ginger, peeled
  • 2 tsp MCT Oil
  • 1/2 cup cucumber
  • juice of 1 lime
  • 1/2 cup frozen mango
  • 1/4 cup full fat canned coconut milk
  • 1/2 cup water
  • A few cubes ice, optional

Place all ingredients in a blender and blend until smooth. If your blender isn’t too strong, I recommend first mixing the water and greens until it becomes liquid (this will prevent any chunkiness) and then add in the other ingredients and blend.
