Colorful, protein-packed stuffed peppers were inspired by a yoga and meditation retreat I attended in the Greek Islands. One evening, this beautiful Mediterranean-inspired meal was served overlooking the sea, and I knew I had to recreate it at home! My clients also love it because it’s easy to prepare, packed with protein, and perfect for meal prep.

This Mediterranean-inspired dish is loaded with ingredients that nourish your body from the inside out. Organic chicken provides high-quality protein to support lean muscle, metabolism, and healthy blood sugar balance. Bell peppers are rich in vitamin C, which supports collagen production, immune health, and healthy skin. Garlic and onions contain sulfur compounds that support heart health and the body’s natural detoxification pathways, while tomatoes provide lycopene, a powerful antioxidant associated with healthy aging.

I love using spices when I cook and za'atar is a staple in my home. It’s a fragrant Middle Eastern spice blend traditionally made with thyme, oregano, sesame seeds, and sumac. Rich in antioxidants and anti-inflammatory plant compounds, it adds incredible flavor while bringing the health benefits of Mediterranean herbs to every bite.

Serve these stuffed peppers on their own, add rice or keep them grain-free, or top them with feta, hummus, or tzatziki and fresh parsley for a delicious meal the whole family will enjoy.

Ingredients
  • 2 pounds organic ground chicken
  • 1 large purple onion, diced
  • 5 cloves garlic, minced
  • 5 tablespoons za'atar seasoning
  • 3/4 cup diced tomatoes
  • 1 teas sea salt (or more to taste)
  • 6 large bell peppers, halved and cored
  • 1 tablespoon extra-virgin olive oil
  • Fresh parsley for garnish

  • Crumbled feta or plant-based feta
  • cooked rice
  • hummus or tzatziki, for serving
Instructions
STEP 1
Preheat the oven to 400 degrees F. Dice the onion, mince the garlic, and halve and core the bell peppers.
STEP 2
Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and sauté for 4 to 5 minutes, until softened.
STEP 3
Add the ground chicken, za'atar seasoning, and sea salt. Cook, breaking up the chicken with a wooden spoon, until no longer pink. Stir in the diced tomatoes and cook for another 2 to 3 minutes.
STEP 4
Arrange the bell peppers cut-side up in a parchment-lined baking dish. If using rice, spoon a small amount into each pepper first. Fill each pepper generously with the chicken mixture and top with feta, if desired.
STEP 5
Cover the baking dish with foil and bake for 20 to 30 minutes, or until the peppers are tender.
STEP 6
Remove the foil and continue baking for 5 to 10 minutes, allowing the feta to melt and lightly brown.
STEP 7
Garnish with fresh parsley or your favorite herbs and serve with hummus or homemade tzatziki, if desired.
