These are so easy to make and so fresh and creamy. I love serving this at cocktail parties; all my friends with gluten sensitivities are incredibly appreciative!

Makes about 24
  • 2 medium cucumbers
  • 4 ounces smoked salmon
  • 6 tablespoons whipped cream cheese
  • 1 tablespoon fresh lemon juice
  • Freshly ground black pepper
Wash the cucumbers to remove the waxy layer. With a vegetable peeler, make alternating stripes. Slice the cucumbers into 1/4- to 1/2-inch rounds and blot with paper towels.

To assemble, spread a layer of cream cheese on each cucumber round, top with a layer of smoked salmon (cut or folded to size), and season with lemon juice and ground pepper. Serve cold.
