If there was ever a recipe that proves you can have something that tastes like a treat while still being deeply nourishing, this is it. Vegetables and chocolate can go together!

Zucchini muffins are one of my favorite “real-life” solutions for busy mornings, after-school snacks, or even a healthier dessert. They are gluten-free, dairy-free, and refined sugar-light while still being rich, satisfying, and genuinely delicious.

What I love is that they are a simple way to sneak in fruits, vegetables, fiber, and protein all in one bite—without anyone feeling like they are eating something “healthy.”

Zucchini adds fiber, along with vitamin C, potassium, and antioxidants that support hydration and digestion. You can see little green flecks in each muffin, which is a reminder that real food doesn’t need to be hidden—it can be beautiful.

Blueberries bring natural sweetness along with anthocyanins, powerful antioxidants that support brain health, cardiovascular function, and cellular protection against oxidative stress.

Chickpea flour is what gives these muffins their protein boost. It is naturally rich in plant-based protein, fiber, iron, and folate, helping to stabilize blood sugar and support sustained energy without the crash you get from traditional refined flours.

Chia seeds add additional fiber, protein, and healthy fats that help keep you full longer. Hemp seeds further enhance the protein content while also providing essential omega fatty acids that support brain health, hormone balance, and satiety.

Raw cacao powder and cacao nibs provide a rich chocolate flavor along with magnesium, iron, and polyphenol antioxidants. These compounds support mood, energy production, and overall cellular health. In fact, cacao is one of the most antioxidant-dense foods.

Cinnamon adds warmth while also supporting healthy blood sugar balance.

Coconut oil provides healthy fats that support hormone production and satiety, while apple cider vinegar helps activate the baking soda and adds a subtle brightness to the flavor.

The best part? These muffins are incredibly kid-approved. In my house, they never last more than a day.

  • 1 cup raw zucchini, grated
  • 1/2 cup pureed blueberries
  • 1/4 cup maple syrup
  • 1/3 cup coconut oil, melted
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon vanilla extract
  • 1 cup gluten-free brown rice flour
  • 3/4 cup chickpea flour (garbanzo bean flour)
  • 1 teaspoon Himalayan sea salt
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 2 tablespoons chia seeds
  • 2 tablespoons hemp seeds
  • 3 tablespoons raw cacao nibs
  • 2 tablespoons cacao powder
  • 1/2 cup vegan dark chocolate chips
Instructions
STEP 1
Preheat the oven to 350 degrees F. In a bowl, combine all dry ingredients and set aside. In a separate bowl, mix all wet ingredients, including grated zucchini and pureed blueberries.
STEP 2
Combine wet and dry ingredients and stir until fully incorporated. Scoop batter into a greased mini muffin tin (use coconut oil or parchment liners). Top with cacao nibs or chocolate chips if desired. Bake for 20 to 24 minutes, depending on oven strength. Let cool for 8 to 10 minutes before removing from the pan.
