Thanksgiving may be over, but Christmas and New Year are fast approaching. What is the best part during the holidays? You guessed it right -- food, gifts and the gatherings! Christmas and New Year are truly festive in the Philippines. There are lanterns and Christmas trees in each and every house you'll pass by. Most children are roaming around the neighborhood singing Christmas carols and the malls are always filled with people buying gifts for their friends and loved ones.
 
It is quite similar here in New York, but because most of my relatives are back home, I think I enjoy the festivities there a tad more. One thing that would never change though, is my appetite for food. Here is a recipe that you might like to try for Christmas or New Year.
 
1 pound chicken
2 tablespoons minced garlic or 1 teaspoon garlic powder
2 teaspoons garlic salt
1 cup maple syrup (if not available, pancake syrup or honey)
1/2 teaspoon chili flakes
1 teaspoon soy sauce or seasoning salt
2 eggs
Flour
Oil
 
Season chicken with garlic salt and pepper. Crack eggs over the chicken and mix until it coats the chicken. In a plastic bag, add a cup or so of flour. Place the chicken inside the bag and shake it. Make sure that the chicken is breaded with flour properly. Set the chicken aside and let it rest for an hour or two. Fry the chicken in canola oil until it’s golden brown and crispy.
 
In a separate pan, add about 2 teaspoons of canola oil and saute minced garlic until it’s golden brown. Add the chili flakes and the maple syrup. Let it simmer for a few minutes and add some seasoning salt of soy sauce. Turn off the heat and let it cool. Pour the glaze over the chicken and mix until coats all the pieces. Enjoy the holidays.
