Warm Cabbage Salad With Bacon

Serves 6
  • 3 slices bacon, chopped
  • 3 tablespoons cider vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon whole-grain mustard
  • 1/2 teaspoon honey
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground pepper
  • 2 tablespoons grapeseed or canola oil
  • 2 medium carrots, sliced
  • 1/2 medium red onion, chopped
  • 4 cups chopped savoy cabbage (1/2 medium head)
Cook bacon in a large skillet over medium-low heat, stirring often, until crisp, 8 to 10 minutes.
