NEW YORK—Australian chef Shaun Hergatt and Jimmy Haber’s Esquared Hospitality will open Juni, a boutique restaurant, inside Manhattan’s Hotel Chandler in Midtown on Aug 19.

Juni roughly translates to “the heart of the season.” The restaurant aims to serve the cream of the crop for each season. 

Their menu offers 10-, six-, and four-course tasting menus, featuring “of-the-moment” ingredients provided by local farmers whenever possible. 

“Each element of Juni, from the overall design down to the cocktails, is focused on emphasizing nature at its best,” Hergatt said in a statement. 

Special dinner dishes include the Satur Farms toy box tomatoes with bush basil, tomato gelée, blue basil flowers; the Frog Hollow peach tartare, with pistachio dust; and veal tenderloin with quinoa, burdock, and mizuna.

The three-course prix-fixe lunch menu also changes weekly.

They also serve wines and beverages with the same philosophy. Sommelier Jason Galang worked with Chef Hergatt to create the cocktail program, which features freshly picked vegetables, produce, and herbs.

The boutique restaurant seats 50. All dishes will also be offered à la carte.
