Pasta con Cime di Rapa (Pasta with Broccoli Rabe)
- 10 ounces broccoli rabe, rinsed and chopped
- 3 cloves garlic
- 1/2 teaspoon chili pepper
- 1 anchovy fillet
- 1/2 cup breadcrumbs (optional)
- Extra virgin olive oil
- 3/4 pound short dry pasta
In a large pot, bring water to a boil and season heavily with salt. Cook the pasta and cleaned broccoli rabe in the water. Cook together until the pasta is al dente. Drain well.
Separately, in a large frying pan, fry the fresh garlic with the chili pepper, the anchovy fillet and, if desired, plenty of breadcrumbs.
When the garlic is golden, add the pasta and broccoli rabe and fry for a few minutes.
Serve with a drizzle of olive oil.
