Chicken noodle with meat ball soup is a typical Indonesian dish commonly found at streetside food vendors. There are a lot of variations to this dish, from the ingredients involved, to the way the dish is cooked. I have been living in the United States for more than eight years, and this is one of the dishes that I missed the most from back home. I have tried to recreate it here and though nothing beats the original, this version comes pretty close.

Ingredients:

Serves 2

1/2 chicken (bone in)
2 packages egg noodles (these can be found in asian markets and usually come in packages of six)
3 heads of baby bok choy, chinese broccoli, or similar asian green will also work.
10 beef meat balls (these can usually be purchased in you local asian market)
1 small shallot
1 teaspoon minced garlic
2 teaspoons salt
1/2 teaspoon pepper
vegetable oil
2 1/2 tablespoons sweet soy sauce
1 teaspoon sesame oil
enough water to just cover the chicken

Method:

In a saucepan boil chicken in plain water without seasoning for about 20 minutes or until it is tender. When done, remove chicken and reserve the liquid (this will become the base for your soup). Remove chicken from bones and cut chicken into small pieces. Mince the shallot into small pieces, cut bok choy to about 2 inch long. Heat canola oil in a frying pan; add shallot and minced garlic. Add chicken into the mix and stir fry together. Sprinkle some salt, pepper, and add sweet soy sauce to the mix. When chicken has some color remove from heat and set aside.

Soup
Return the chicken cooking liquid to heat and season with salt pepper and soy sauce to taste
Add meat balls and bok choy into the soup. Simmer on low heat. Meatballs are done when they float.

Noodle Topping
Boil noodles for about 3 minutes in plain water. Rinse with cold water. Add sesame oil to an empty bowl. Mix with noodles. Add chicken on top of noodle. You can also add a little bit of the vegetables to the dish for presentation.
