These rice crisp bars are my go-to treat when I have to bring something to a party or potluck and I have absolutely no time. You can make them as simple or as fancy as you want, and I promise they'll get rave reviews! They keep best in the fridge.
Ingredients
1/2 cup brown rice syrup
1/2 cup almond or peanut butter
1 tbsp Melt Organic/butter
1 tsp organic maple syrup
1/4 tsp fine sea salt, or to taste 1 tsp organic vanilla extract
3 1/2 cups rice crisp cereal
Directions
Combine brown rice syrup, nut butter, Melt Organic, maple syrup, and salt in a pot over medium heat. Stir until all the lumps smooth out and remove from heat.
Stir in vanilla and rice crisps, mixing until coated
Scoop into a baking pan lined with parchment paper and spread out evenly. Roll flat with rolling pin or wet jar. Set for 5 minutes in the freezer.
Topping ideas
1/3 cup (65 g) non-dairy chocolate chips and 1/2 teaspoon coconut oil, melted and drizzled
Unsweetened shredded coconut
Dried fruit
Chocolate chips
Organic candy pieces (such as SunSpire SunDrops)
Sliced almonds
