Beat the Heat: Make Sandwiches for Dinner

If you are trying to beat the heat in the kitchen, try making your family one of these delicious sandwiches for dinner tonight. We have a tendency to think of a sandwich as boring and not a "real" meal. But if you are a little creative with your sandwich ingredients and make a couple of sumptuous side dishes, your family's palate will be pleased.

If you include a dessert like low-fat vanilla ice cream topped with fresh strawberries and ready whipped cream your family will be begging you to make sandwiches again.

Grilled Green Pepper Cheese Sandwich

  • 1 green pepper
  • 2 tablespoons olive oil
  • Provolone cheese
  • Bread
  • Butter

Slice green pepper from the middle of the pepper top to bottom and spread with oil olive. Remove stems, seeds, and whitish ribs. Brush lightly with oil and grill for 5 minutes on each side on low flame.

Put cheese and grilled pepper between slices of bread. Lightly butter the outside of the bread. Put the sandwich in a skillet and cook each side until brown.

Serve with romaine lettuce topped with tomato and avocado and Knorr's Chicken and Broccoli Rice.

Makes 2

Grilled Shrimp Sandwich Pocket

    8 raw easy-to-peel shrimp
  • Quarter size slice of fresh ginger chopped finely
  • 1 clove of garlic, crushed
  • 2 tablespoons fresh lime juice if available or use concentrate
  • 2 tablespoons sesame oil
  • Red bell pepper thinly sliced
  • Lettuce chopped
  • Red onion thinly sliced
  • Whole wheat pocket bread
  • Mayonnaise if desired

Marinate shrimp with garlic, ginger, sesame oil, and lime for at least 1 hour.

Grill shrimp on medium flame with peel on for 3-4 minutes per side until cooked through. The peel adds flavor to shrimp.

Peel shrimp when shrimp is cooked.

Spread 1 tablespoon of mayonnaise in pocket.

Put shrimp, red pepper, onion, and lettuce in pocket.

Serve with grilled corn on the cob and Knorr's Sesame Chicken Rice.
