Whether for a quick family meal or for spontaneous outdoor entertaining, hamburgers rule!

If you like your burgers spicy, homey, or ethnic, you will enjoy these two moist and flavourful recipes. Serve with the tried-and-true lettuce, tomato, onion, and relish.

Cutting back on carbs this summer? Forgo the bun and serve the patties with crisp leafy greens or a creamy cucumber dill salad.

Liberty Burgers

Serves 4 to 6

  • 454 g (1 lb) lean ground beef (or vegetarian mince)
  • 1 small onion, chopped fine
  • 2 cloves garlic, chopped fine
  • 45 ml (3 tbsp) natural bread crumbs
  • 30 ml (2 tbsp) Worcestershire sauce
  • 2 ml (1/2 tsp) salt
  • 5 ml (1 tsp) pepper
  • 10 ml (2 tsp) hot chilli pepper sauce
  • 1 small egg

Mix the ground beef or vegetarian mince in a large bowl with all the ingredients and blend thoroughly. Divide into six portions. Using your hands, mould each portion into a disc shape.

Grill under medium heat for 10 minutes. When they are nicely browned, turn them over gently. Grill for another 10 minutes (or until golden brown).

Lemongrass and Ginger Burgers

Serves 4

  • 450 g (1 lb) lean pork mince
  • 30 ml (2 tbsp) ginger root
  • 2 lemongrass stalks
  • Sweet chilli sauce
  • Salt and pepper

Grate or finely chop the ginger root. Peel the outer layer of the lemongrass, trim both ends, and chop finely.

In a large bowl, mix the pork, ginger, and lemongrass. Season with salt and pepper. Divide into quarters and shape into four round patties.

Grill under medium heat for 10 minutes (or until golden brown), then flip the patties and grill for another 10 minutes (or until golden brown).

Serve patties in rolls with lettuce and tomato and top with sweet chilli sauce.
