Lemon Broccolini–Shiitake Sauté With Garlic Chips

Serves 4

Ingredients
1/4 cup Wanjashan low-sodium organic soy sauce, plus 1 tablespoon 
2 bunches broccolini, broken into 2-inch pieces
1/3 cup thinly sliced garlic
1/2 cup extra virgin olive oil
2 cups sliced shiitakes
1/2 teaspoon Korean chili flakes (or red chili)
1/3 cup chopped preserved lemon

Directions
In a stockpot with 1 quart of water, add the soy sauce and bring to a boil. Prepare an ice bath. Shock the broccolini until tender crisp, about 3 minutes and shock in the ice bath. In the same pot, dry out and add the extra virgin olive oil on medium-high heat. Add the garlic and keep stirring until golden brown. Drain the garlic leaving a little oil and sauté the shiitakes, season and add chili flake. Return garlic to the stockpot with the chili flakes, the preserved lemon, and blanched broccolini. Heat through, check for seasoning, and serve.
