NEW YORK—Greenwich Project is known for its wine, but what about swine? 

Chef Carmine Di Giovanni has brought bacon to new levels with his creation of bacon ice cream with sweet pea crema. His penchant for all things porky will be served on Mondays through August.

Greenwich Project’s mixologists have also created a limited-time specialty cocktail—a Fat-Washed Bloody Mary with fried bacon strip and olive and celery garnish.

West Village restaurant also has bespoke cocktails, a specialty wine list, and a jamón-themed cocktail. 

The Monday specials will include dishes such as: Pig Head Pâté with Pickled Vegetable Variations; Pig Head “Chopped” Salad, Whole Roasted Pig Head for two with sides of Summer Succotash and Watermelon; Cilantro and Spicy Cashews; Berkshire Pork Chop with Clams.

Greenwich Project has also launched a $40/bottle wine list offering Sparkling, White, Rosé and Red selections. 

In addition to the weekly swine specials, the regular menu is also available—which includes items such as the Fideo Squid Ink Pasta made with head-on prawn and pimenton aioli ($17); Local Black Bass made with sake broth, turnips, and trumpet royale ($32); and Porcelet De Lait made with peach, jalapeño, caramel ginger, and cilantro ($36).
