Kids in the Kitchen: Make Egg Burritos

Try something a little different for breakfast. Or even have these delicious scrambled egg burritos for lunch or dinner. They are easy to make and fun to eat!

Ingredients

8 large eggs
1/2 cup shredded cheddar cheese
1/4 cup shredded Monterey Jack cheese
1/4 shredded mozzarella cheese
1/2 cup real bacon bits
2 tablespoons butter
8 flour tortillas, 8-inch
1 cup medium salsa

Tools Needed:
Large mixing bowl
Measuring cups
Wire whisk
Large nonstick skillet
Spatula
Paper towels
Oven mitts

Using wire whisk, beat together in a large mixing bowl the eggs, cheeses, and bacon bits.

Melt butter in nonstick skillet over medium heat on stove top. Add the egg and cheese mixture. Scramble the eggs by mixing them in the skillet with the spatula until all the eggs are cooked. Remove the skillet from the stove.

Place the tortillas, stacked, onto a microwave-safe plate and cover with a paper towel. Heat in the microwave on high for 30 seconds to warm them through. Making sure to use oven mitts, remove the plate from the microwave.

Making the Burritos:

Place a tortilla on a cutting board and place 1/2 cup of the egg and cheese mixture on the tortilla. Wrap up the tortilla around the eggs to make a burrito.

One serving is equal to two burritos. Serve with 1/4 cup salsa.
