Pasta With Zucchini

Not sure what to do with all the zucchini from your garden? Try this delightful pasta dish that is easy to make and delicious to eat. If you want to make it an even more delectable dish, upgrade your parmesan to Parmigiano Reggiano.

8 ounces pasta, cooked as directed
2 tomatoes, chopped
1/2 onion, diced
3 zucchini, diced
2 cups fresh spinach
2 tablespoons garlic, minced
1/4 cup olive oil
1/4 cup parmesan cheese
1/4 cup fresh basil

Heat oil on medium heat in a large nonstick skillet; and sauté garlic, onion, and tomato for 10 minutes. Add zucchini, spinach, and basil and cook for another 10 minutes stirring occasionally. Toss cooked pasta in pan and mix. Top with cheese.
